WThis is an easy version of a drink found on the seasonal cocktail list. Designed as a batch pre-mixed that's bursting with tastes of the holiday season, rendering it perfect for a festive gathering. Save the extra citrus syrup you can use for brunch beverages, puddings, or to make more rounds of this cocktail.

Bikini Recipe

Serves 10 guests

Ingredients for the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (makes 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Place all the components in a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the burner allowing it to reach room temperature fully. Transfer into an sterilised bottle, close it keeping it chilled, where it will keep for up to four weeks.

To make Batch Mix: Mix all the liquids into one large bottle, allow it to infuse for an hour, then filter it , ideally through muslin, to ensure it's fully clarified.

To serve: Measure 85ml of your batch mix to a mixing glass packed with ice, and stir gently for one minute to chill. Pour to a frosted cocktail glass or similar, decorate with a few cranberries and finish using a brief mist of mandarin oil over the top.
